Lezione 3: lunedi 07.05.07 ore 20:30: l’esame olfattivo; classificazione dei profumi: primari, secondari e terziari; note di viticoltura e ulteriori aspetti della vinificazione; tecniche di riconoscimento dei profumi e analisi qualitativa dei profumi di un vino; degustazione di quattro vini. Lezione 4, lunedi 14.05.07 ore 20:30: l’esame gustativo; i quattro sapori fondamentali: dolce, acido, salato, amaro; i tannini e il legno; la gestione della vite; influenza della cantina; degustazione di quattro vini. Lezione 5, lunedi 21.05.07 ore 20:30: l’equilibrio dei sapori; le interferenze degli odori; la valutazione qualitativa e le schede di degustazione; degustazione di cinque vini. Lezione 6, mercoledi 23.05.07 ore 20:30: servizio, conservazione e cantina; leggere un’etichetta, norme disciplinari di produzione; abbinamento cibo-vino; degustazione di quattro vini.
